Thrifty Thursdays: A Recipe

A couple days ago, one of my really good friends Allie came up for a visit from San Francisco. She’s gearing up for a semester in Thailand in August and this just might be one of the last times I see her before she leaves. We planned on hitting downtown Roseville for a few hours but when it came down to it, we really just went to Target and Sprouts to get stuff for dinner. I’m pretty sure I ruined Sprouts forever for Allie, but it was worth the trip.

We had Mahi Mahi tacos for dinner and they were delicious! Typically I’m not a huge fish fan, I usually just like salmon or if I do have tuna, I like it fried in tempura batter and rolled up all pretty for me in a delicious sushi roll. But they were really good! We had toppings like chopped up tomatoes, pineapple, jalapeno and bell pepper, sliced avocado, shredded cabbage and lemon. It was set up like a taco bar and we served ourselves.

After dinner was over, there were still a lot of toppings leftover so I decided to make a pineapple salsa out of it. And it turned out so surprisingly delicious and refreshing, I decided to share the recipe with you guys! I don’t have all the ingredients measured out as they were just what was left over, but the cool thing about salsa is that it’s pretty forgiving, so you don’t need exact measurements and you can add or extract what you want.

  • Chopped pineapple
  • Chopped tomatoes
  • Chopped bell pepper
  • Chopped cilantro
  • Chopped jalapeno
  • Sliced avocado
  • Squirt of lime for preservation

I just threw all the ingredients into the blender and hoped for the best! Mine turned out a little thick and chunky, which is perfect because that’s how I like my salsa. You can blend it more or less, depending on how you like your salsa. It’s a crisp and refreshing, and there’s some spice from the jalapeno and some sweet from the pineapple. Perfect for the summer!

I enjoyed it so much, I put it on my black bean tacos and used it as a dip for my chips the next day. Yeah, tacos are big around here.

Momma’s Garden Project: Round 2

garden projectMy garden is back in action! With the big move taking every ounce of our attention, my garden was put on hold until we were settled in and the beds were moved from Stockton. Luckily, I have a green thumb of a dad and he came over last Saturday and helped me put the garden boxes in, pick out my plants and get everything planted.

SONY DSCRight now, we have four tomato plants, six pepper plants, two basil plants, four zucchini plants, a lavender plant and some beautiful flowers. All the plants seem to be doing fine, except for the basil and rosemary. Apparently I got a little sloppy with the basil and it wasn’t put all the way into the soil (whoooops), so my dad helped me fix that up a little and now we’re back in action! Except for the rosemary….

This round already feels easier to maintain because it’s my second go-round, and it’s right in my backyard, where we spend a lot of time anyway. And I love that I can look out at it from my bedroom window. It’s a lovely view and a daily reminder that I need to keep it looking pretty so I’m not ashamed every time I look out there!

I’m looking forward to watching my second garden grow, and enjoying its bounty. There is still some more stuff I want to plant in all of the random planters we have around here, but for now…this is perfect. I just hope it can withstand a one-and-a-half year-old and a chocolate lab.

Thrifty Thursdays

Today I woke up and realized that I did not write all week. I knew something felt a little funny. It’s a continuous process to get in a routine, and I’m trying again to write at least once a day. So, I’m starting fresh and sharing some cool things I found just surfing my Facebook news feed. All the times I’ve threatened canceling my account, I continue to keep it open because with every negative post I see, there is an explosion of inspiration. I’ve learned to just stay on my page and visit the pages I like than to get caught up in the drama of Facebook. Ain’t nobody got time for that.

So, today’s Thrifty Thursday post is a little mix of craft, food and skincare. There’s something for everyone!

First, can we all agree that this Macrame Plant Hanger from The Paper Mama is equally as cute as the planter? It only cost Chelsey $5 to make the plant hanger, and she shared her whole tutorial on Better Homes & Gardens. You can also find a tutorial for her planter in her e-book, which I purchased last year, and am totally in love with.

I love when Greatist posts stuff like 400+ Cheap and Healthy Recipes, because it challenges the preconception that eating healthy has to be expensive. As long as you have some fruit, veggies, protein and grain…you can make some pretty healthy stuff. They have it broken down it the basic categories – breakfast, lunch, dinner, soup and more. I’ve been getting pretty bored of my normal everyday eats, so I love finding new recipes to test.

I always save tutorials and recipes for sugar/salt scrubs, but I have yet to actually make one. What’s up with that? So I’m saving this DIY Citrus Salt Scrub recipe from Offbeat + Inspired in hopes that I’ll actually use it. I got some essential oils for the candle kit that I was obsessed with getting but still haven’t made anything. With it already feeling like the middle of summer outside and spending my days watching my daughter float around in our inflatable pool, my skin has been angry with me. So this might just give it the love it needs.

And what is more perfect in the summer heat than ice cream?! Especially this Dark Chocolate Strawberry Ice Cream recipe from Love & Olive Oil. You will need an ice cream maker to make this, so if you have one already…then check out this recipe. I pretty much love anything with dark chocolate and strawberries in it, so I need to buy an ice cream maker to make this. Not very thrifty, but hey…

IMG_2252And finally, check out this children’s china cabinet I got from the Sacramento Antique Faire on Sunday! It was marked down from $50 to $30 and it just needs a little love before it’s perfect! Cecilia already has a bunch of kitchen trinkets to fill it up with so she can work on her masterpiece while I’m in the kitchen.

For the love of: Motherhood

My plan was to do a “Yo Momma Monday” reflection on my life as Cecilia’s mama this Monday, but we were visiting family in Stockton and I wasn’t around my computer. Family is always the perfect excuse for not writing. This is my third year celebrating Mothers Day, and the second year that I get to spend with my kid. Technically, I did spend the first one with her too…but she was celebrating in my belly.

A couple weeks ago, my friend and I were talking about that quote “Everything changed and nothing changed” when we had our kids. Sure, my Friday nights are a little different and all of the money I do earn is spent on formula, gas and groceries…but in the bigger picture, what all has changed?923957_1414953962103156_2455092_n

I’m still me. And while my family has grown, they’re all still the same people. I was never huge into traveling, so it’s not like that changed. She didn’t derail my studies, she actually motivated me to apply to the school I’ve always wanted to attend, and not give up when it felt like everything was crumbling around me. She didn’t take me away from my big, fancy job. I was working at a boutique here and there and interning at a local paper. Nothing that I had to fret about giving up when I had her.

In fact, I actually like this version of myself better. I’m nicer. I don’t forget birthdays and I’m not scurrying around my house to find random items I can give people as gifts. I don’t check for my money and suddenly remember I spent it all at the bar the night before, or I left my credit card there. I know exactly where I spent it all – at the grocery store, duh. I stick with plans I make with people (for the most part), and when I do flake, it’s most likely because my daughter fell asleep right before I was planning on leaving or she’s been in tantrum city. And when I do have a beer, I enjoy it. Because that will be it for the night.

02b5cad6a97211e3874612e79814bf9e_8I appreciate and respect my parents (and pretty much all parents) a whole lot more and I’m constantly in awe of everything they did for me and my brother. I learn to pick my battles, and I don’t argue as much. I get frustrated but now I deal with it, and not just freak out and shut the world out.

She teaches me to not value all the stuff I have lying around, because she will probably walk all over them, or chew on them, or tear them apart. She teaches me to put up anything I truly value and to take good care of it, because if I let her have it, she will most likely destroy it. She knows when I need to take a break from the computer or my cell phone. And most of all, she teaches me not to take myself too seriously.

929315_642978312447553_726817861_nBecause of her, I have taught myself how to cook, have maintained a garden and have healthy relationships with all of my friends and family. Because of her, I focus on the people and things that hold the most importance, and let go of what I can. Instead of putting 10% into a million projects, I pick a few and put everything that I have left in me into them. Because of her, I push myself to continue going to school for something I love, because I want her to do the same when she’s ready.

Because of her, I have changed. But I will always be the same Amanda.

My Healthy Journey

SONY DSCLast Wednesday, something kind of miraculous happened. I set my alarm for 8 am and I actually woke up to it! Didn’t hit the snooze button, no lying in bed listening to my alarm’s rampage – I simply just got up and put my workout clothes on. I jumped on the Wii Fit and was immediately reminded that it had been 183 days since the little Wii dude last saw me. Yeah, I know. That’s why I’m here again…punk.

After it weighed me – and confirmed my suspicions that I gained weight – it was back to the grind. Since then, I’ve gotten up every morning (sometimes a little later than 8 am, not going to lie) and did some sort of exercise before Cecilia rises. She’s a party animal and goes to sleep at midnight and wakes up around 9 or 10 am. And it is kind of nice to have a couple hours of alone time before the beautiful insanity begins.

I worked out a little schedule where I could fit in at least 30 minutes of exercise a day:

  • Monday: Wii Fit
  • Tues: Bodyweight Exercise
  • Wed: Wii Fit
  • Thurs: Bodyweight
  • Fri: Yoga
  • Sat: Walk around the park with Cecilia
  • Sun: Yard duty (that is truly a workout)

It has felt really good to finally get in a groove and get back in the kitchen. Those couple weeks of fast food and pizza while moving really effected us in a weird way. I’ve been using this workout for my bodyweight days and it totally kicks my butt. I know it’s not completely all bodyweight, but that’s what I’m calling it.

I also downloaded a basic shopping list from The Gracious Pantry and I’m challenging myself to use up all the produce we have here before buying new stuff so nothing goes to waste. I’m also challenging myself to add an extra exercise every week. Since I accomplished 30 minutes a day last week, this week I’m adding 15 minutes of morning yoga.

I have ten pounds until my goal weight. That’s when I’m going to go through all my old clothes one last time to see what I can keep and what I totally need to just let go. Because I have zero plans to get under 130 lbs.

Annual Day of Giving: Nonprofit Love

Since I got introduced to several local nonprofits while interning at a local paper in 2011, they have always held a special place in my heart. It was my time at Vox Sacramento that motivated me to organize a fundraiser for them and blog for them when I could. I loved that I could embrace my love of writing and get involved with my community at the same time.

Of course, my life got kind of crazy in 2012 when I had Cecilia and everything else was placed on hold for a while. Now that she’s nearing two, I’m getting back into the community because it’s something I’m going to encourage when she’s old enough. It makes me equally happy and proud that Sacramento is home to so many different art, education, health and community improvement organizations.

I know how the dedication these volunteers have for their organization/charity and I know that it’s incredibly rare that they are financially compensated for all the work they do. But that’s not why they do it, they do it because there is something pushing them each and every day to give back to their community and help where they can.

The annual BIG Day of Giving is a 24 hour event that takes place from 12 am – 11:59 pm on May 6, where nonprofits can raise an unrestricted amount of money for their organization. Halfway into it, and Sacramento has already raised over a million dollars for various local organizations. Amazing!

I like to do my part by sharing nonprofits that are both local and afar that are shaping an amazing community. You can visit BIG Day of Giving to make your donation for a specific charity, or you can pick from categories like “Arts & Culture,” “Community Improvement” and “Education.”

Founded in 2011, 916 INK is run by volunteers that get the youth in Sacramento more involved in the literary arts. They hold readings featuring work by children, encourage grade school students to make comics (which appeared at the Sacramento Free Comic Book Day) and also work with Plaid Zebra Films to make short films of the young authors. Also founded in 2011, the volunteers at California Food Literacy Center educate the community about food and making smarter food choices that will lead to a sustainable life. They teach classes, partner with other awesome organizations like Sacramento Food Bank & Family Services and Soil Born Farms, and organize events such as the Sacramento Food Film Festival.  Donate to them directly on BIG Day of Giving and connect with them on Facebook.

Founded in 2002, The GreenHouse volunteers focus on the emotional, spiritual, intellectual and physical development of under-resourced youth and their families in North Sacramento. They encourage active involvement in the community and participate in neighborhood beautification projects. They just renovated their Clubhouse (for which they are holding a Grand Opening on June 13th) and they are hosting Kids at Heart – Community Awards Auction & Dinner – on Saturday, May 31.
